Air Fried

  • 1 container ricotta cheese
  • 1 tsp basil
  • 1 tsp onion powder
  • 2 tsp parsley flakes
  • 1 tsp Italian seasoning
  • 2 tsp minced garlic
  • 5 eggs
  • 1/2 cup Italian cheese
  • 1/2 cup parmesan cheese
  • 1 tbsp dried chives
  • 1 cup all purpose flour
  • 2 cup breadcrumbs
  • 10 lasagna noodles, cooked according to package directions

  1. Make sure lasagna is cooked and cooled before handling.
  2. In a medium bowl, stir together ricotta, 2 eggs, chives, parsley, basil, onion powder, and garlic. Add Italian and parmesan cheese and mix well. Spread mixture on each lasagna noodle.
  3. Fold each lasagna noodle three or four times to create a square or triangle. Freeze on a baking sheet until firm, 30 minutes.
  4. When ready to cook, put flour, remaining 3 eggs, and bread crumbs in three separate shallow bowls. Whisk eggs until beaten and season bread crumbs with salt and pepper. Working in batches, dredge lasagna squares or triangles in flour, then dip in eggs, and finally toss in bread crumbs to coat.
  5. Place 1-2 lasagna squares or triangles in air fryer (do not crowd or overfill) and spray olive oil on top.
  6. Set for 380°F for 15 min and flip halfway-when flipping, spray olive oil on the other side of lasagna. Cook until lasagna is golden brown.
  7. Serve with marinara or favorite Italian sauce.
